Do you guys remember when my love affair with sugar cookie bars started? Don’t worry if you don’t remember. I’ll fill you in…Haha!

Anyway, it was Christmas of 2018 when someone dropped off a plate full of those delicious goodies (remember when we could drop off homemade baked goods at people’s houses pre-COVID?)

I worked until I mastered my own version of a sugar cookie bar and I debuted these sugar cookie bars to the world in January of 2019. They were soo good!



Today, I am dishing up a new twist on this family-favorite recipe just in time for Halloween. Let me introduce you to these not too spooky treats I have dubbed Monster Sugar Cookie Bars!

They are super easy to make and require only a few ingredients. Those are my favorite types of recipes because the point is to have them taste great and not have to melt away in the kitchen for too over-long a time so that you can get to enjoying and eating them faster.  I think these had completely disappeared from the plastic container they were stored in less than 24 hours later! That is some serious ghoul work at play for sure!

Here are the ingredients you need:

Cookie Bar Batter

1 cup butter, room temperature
1 cup sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
3/4 tsp salt
1/4 tsp baking powder

Frosting and Decorations

You can use this recipe for frosting or any container of green frosting

Directions

Preheat oven to 350ºF. Line a  9 x 13 baking sheet with parchment paper. Mix together the flour, salt, and baking powder in a small bowl. Set aside.

In a large mixing bowl, cream together butter and sugar. Add the eggs and vanilla. Mix until combined. Add the dry ingredients to the wet ingredients and stir again until combined.

Press the dough into a prepared baking sheet. You might have to even the dough out with a large flat spoon. Don’t worry if there are lumps on the top though, because you will frost the top part. You just want it to be evenly spread out on top of your parchment paper from corner to corner.

Bake for 15-20 minutes or until barely light brown or a toothpick comes out clean. Cool completely.

I cut them into 12 squares on top of the parchment paper once they have cooled and then frost and decorate each sugar cookie bar. I find it is easier that way.

Easy to make sugar cookie bars perfect for Halloween!

Ingredients
