Two magical things happened this Christmas. The first was someone dropped off a plate of sugar cookie bars that were so good they left me wondering how I had made it to the ripe old age of 40ish and never had one before?! The second magical thing was the gift of brand new baking sheets. Now since the alignment of these two magical, but separate things occurred, a recipe has brewing in my mind. And today, I am super excited to share it with all of you!
A quick cursory look over on one of my fave places- Pinterest, left me a bit curfuddled with how may different recipes there were. Mostly, because, I do enjoy baking, but I have limited time and if a recipe has like 10 trillion steps, then I am out. Asking me to sift is not going to happen, so I took a look and created my own JENerally Informed spin on this new personal favorite!
Here is what you need to make it!
Frosting and Topping
2 cups of cream cheese frosting. (Here is a little secret: I used store bought and it still was wicked awesome)
1 bag cherry heart gummies
Cookie Bar Batter
- 1cup butter, room temperature
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 2 1/2 cups flour
- 3/4 tsp salt
- 1/4 tsp baking powder
Preheat oven to 350ºF. Line a half baking sheet with parchment paper. Mix together the flour, salt, and baking powder in a small bowl. Set aside.
In a large mixing bowl, cream together butter and sugar. Add the eggs and vanilla. Mix until combined. Add the dry ingredients to the wet ingredients and stir again until combined.
Press into prepared baking sheet. Bake for 15-18 minutes or until barely light brown. Cool completely.
Frost the sugar cookie bar with a nice even layer of your cream cheese frosting.
I was able to cut out 15 evenly sized sugar cookie bar sizes, and then topped each sugar cookie bar with a heart gummy.
Because of the parchment paper, serving each of these bars is so easy!
