This last weekend my husband and I were invited to an adults only Holiday party. We were super excited, but we knew that this particular weekend was going to be busy. There were visits to see lights, shopping excursions, end of semester projects to work on with our children and so much more. It would would have been somewhat tempting to avoid the extra work of yet another event, but considering we do things like this for ourselves maybe once a year, I was not going to be deterred. If I was going to do this, it needed to be done right, so I needed to come up with a food contribution for the party that would be both simple and delicious. Look what I came up with!

I don’t blame you, because when we bought our dish home from the party it was scraped clean. That’s when you know you have a winner. What all of the other party guests didn’t know though is that this delicious recipe took me only about 15 minutes to pull together and I did it with the help of RO*TEL and Rosarita.

All of the ingredients and fresh produce for this amazing 7 layer bean dip were picked up at my local Walmart.

The Simply Best 7 Layer Bean Dip Ever

Prep Time: 15 minutes

Yield: Large Trifle or Casserole Dish

Serving Size: 10 people

The Simply Best 7 Layer Bean Dip Ever

Ingredients

  • RO*TEL 2 cans of Mexican Style Lime and Cilantro.
  • Rosarita 2 cans of your favorite variety. i used one Traditional and a larger can of Spicy Jalapeno.
  • 12 oz sour cream.
  • 16 oz shredded cheese.
  • 1 large can sliced olives.
  • 1 head of lettuce
  • Green onions

Instructions

  1. For a prettier effect I used a Trifle dish.
  2. Shred head of lettuce and put to the side.
  3. Combine Rosarita beans as the bottom layer in the dish.
  4. Add a layer of cheese on top of beans.
  5. Then add a layer of sour cream.
  6. On top of sour cream, add in 2 cans of RO*TEL
  7. Add another layer of cheese.
  8. Cover layer of cheese with shredded lettuce.
  9. Add another layer of cheese.
  10. Top with sliced green onions.
