I live in Arizona. The land where COVID cases are spiking and now fires are burning our entire mountains, so the 4th of July has officially been canceled for our community. But not for my family! We are having a backyard extravaganza for our little family of 6. As a mother, I want to try and do something to help make memories during this chaotic time.

Yesterday my husband brought home a watermelon and a whole bunch of fruit. My 7-year-old daughter has been very excited to help plan our 4th of July backyard shindig and so when she saw all of that red, white, and blue fruit, she said it needed to be made into a 4th of July inspired fruit dish for our little party.  We put my thinking caps on, grabbed a cookie cutter out of the cabinet, and we got busy. Look what we made!

I let my 7 year old decide the fruit layering on the bottom, and she did a really good job. Plus when you are eating this you kind of feel like you are eating something decadent, when really it is just fruit! That is winning.

To make this you, of course, need a watermelon, skewers (I grabbed mine at the Dollar Store), other red and blue fruit, a star-shaped cookie cutter, and a really good knife.

It’s best if you cut the watermelon into a circular slice, so that you can maximize how many stars you get out of each slice. You might have to use your knife to clean off the edges surrounding the cookie cutter before you remove the fruit.
