This weekend we ended up with a little case of pink eye for my youngest daughter. After a quick trip to urgent care to confirm her diagnosis and for meds, and since going to church was now out of the picture, I decided to do some baking! I scrounged around the kitchen and discovered that I actually had all of the ingredients to make Pumpkin Cheesecake Bars! I don’t think I have ever made these before, but I do have a wicked base for bars that I have used for my Orange Bars. And you all know how much I love pumpkin anything!
So today let me introduce you to my version of Pumpkin Cheesecake Bars!
Here is what you need for the base. I doubled it and made an 11 x 13 pan size.
Crust Ingredients
1 stick of softened butter
1/4 cup sugar
1 large egg
1 teaspoon vanilla
3/4 cup flour
Mix all of the ingredients well and press evenly into the bottom of a greased 11 x 13 pan. Bake for 15 minutes at 350. You just want the bar base to be a nice golden brown.

Ingredients
- Crust:
- 1 stick of softened butter
- 1/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 3/4 cup flour
- Filling:
- 8 ounces of cream cheese softened
- 1/2 cup sugar
- 1/4 brown sugar
- 15 oz of pumpkin
- 1 tsp vanilla
- 1 tablespoon pumpkin pie spice
- 2 containers of whipped topping (1 is for the filling and one container is for the topping)
Instructions
- Crust:
- Mix all of the ingredients well and press evenly into the bottom of a greased 11 x 13 pan. Bake for 15 minutes at 350. You just want the bar base to be a nice golden brown. Let cool before pouring in filling.
- Filling;
- In a large bowl place and mix all of the other ingredients together. You may need to use an electric beater on high for about 2 minutes. For the filling make sure to only add one of the whipped topping containers. The other one is for garnishing the top.
- Once your filling is well blended, pour it on top of your bar crust. Use a spoon to even out the top.
- Place into the fridge to set for about an hour or longer.
- Garnish with whipped topping and place a pumpkin marshmallow or other garnish!
