Pumpkin Cheesecake Bars

This weekend we ended up with a little case of pink eye for my youngest daughter. After a quick trip to urgent care to confirm her diagnosis and for meds, and since going to church was now out of the picture, I decided to do some baking! I scrounged around the kitchen and discovered that I actually had all of the ingredients to make Pumpkin Cheesecake Bars! I don’t think I have ever made these before, but I do have a wicked base for bars that I have used for my Orange Bars. And you all know how much I love pumpkin anything!

So today let me introduce you to my version of Pumpkin Cheesecake Bars!

Here is what you need for the base. I doubled it and made an 11 x 13 pan size.

Crust Ingredients

1 stick of softened butter
1/4 cup sugar
1 large egg
1 teaspoon vanilla
3/4 cup flour

Mix all of the ingredients well and press evenly into the bottom of a greased 11 x 13 pan. Bake for 15 minutes at 350. You just want the bar base to be a nice golden brown.

Pumpkin Cheesecake Bars

Ingredients

  • Crust:
  • 1 stick of softened butter
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • Filling:
  • 8 ounces of cream cheese softened
  • 1/2 cup sugar
  • 1/4 brown sugar
  • 15 oz of pumpkin
  • 1 tsp vanilla
  • 1 tablespoon pumpkin pie spice
  • 2 containers of whipped topping (1 is for the filling and one container is for the topping)

Instructions

  1. Crust:
  2. Mix all of the ingredients well and press evenly into the bottom of a greased 11 x 13 pan. Bake for 15 minutes at 350. You just want the bar base to be a nice golden brown. Let cool before pouring in filling.
  3. Filling;
  4. In a large bowl place and mix all of the other ingredients together. You may need to use an electric beater on high for about 2 minutes. For the filling make sure to only add one of the whipped topping containers. The other one is for garnishing the top.
  5. Once your filling is well blended, pour it on top of your bar crust. Use a spoon to even out the top.
  6. Place into the fridge to set for about an hour or longer.
  7. Garnish with whipped topping and place a pumpkin marshmallow or other garnish!
  8. Enjoy!
