Since starting Keto I have missed donuts. I was never an eat them every day kind of gal, but a soft sweet baked donut every once in a while was one of my happy places. Although, my newest happy place of weighing 20 pounds less than I was a few months ago feels pretty fantastic!
Since I like both of these happy places I needed to find some common ground for them, and so I went to work in the kitchen and perfected a low carb donut that is going to knock your socks off!
Let me introduce you to my low carb- Keto Friendly Key Lime Donut!
Doesn’t it look dreamy, because it really does taste as good as it looks. Something even better about this recipe is that I used an easy secret to get that wonderfully smooth key lime taste without having to squeeze a million of those teeny tiny little key limes. I will share that with you in a bit.
Before we begin you are going to need a good donut pan. I used the Nordic Ware Nonstick donut pan and it is amazing! You can pick it up Here on Amazon.
Here’s An Important Tip!
One of the things I have been cooking with since starting Keto is coconut flour, mostly because Jen’s Guy is allergic to almonds and we can’t use almond flour. I have noticed that a lot of the new and upcoming Keto recipes are featuring coconut flour more these days, because of that same allergy concern. Cooking with coconut flour does take some getting used to, because it expands and you end up using way less of it than other flour substitutes. That is actually a plus, but just don’t try to substitute exact amounts of coconut flour for alternative flour sources when using it. I did that a few times and it was disastrous!
Here is what you need for this recipe:
Donuts
1/4 cup coconut flour
1/3 cup sugar substitute like Stevia or Truvia.
2 tsps baking powder
1 tsp cinnamon
1/2 tsp salt
2 tbsps coconut oil
1/4 cup coconut milk
3 large eggs
1 tsp vanilla
1 to 1 1/4 tsp Young Living Lime essential oil as per taste * If you have any questions about this oil shoot me message. I love YL oils!
Donut Frosting
1/4 cup white cream cheese
2 tsp vanilla
2 tsp sugar substitute
1 tsp coconut milk
2 tsp heavy whipping cream
1 1/4 tsp YL Lime essential oil
2 tsps fresh key lime zest
Here’s how to make them:
Preheat oven to 350.
Mix all of the actual donut ingredients together.
Grease donut pan with coconut oil.
Press donut mixture into pan. Fill each donut about 3/4 full.
Bake for 10 to 15 minutes. * When cooking with coconut flour remember cooked items will not get golden brown. The donut is done cooking when it looks something like this.
While the donut is cooking, mix together all of the frosting ingredients in a blender and put the frosting in the fridge to cool.
Once the donuts have cooled, frost them and then grate on the top of the donut a small layer of key lime zest.And that’s it folks!
