For times like that I have found it is a really good idea to have a couple of practically fool-proof recipes that can be pulled out at a moment’s notice. One of those kind of recipes that I love and helps me to easily and deliciously entertain are for these delicious apple strudel muffins!
They are moist, dreamy-good, and practically melt in you mouth with each bite.

Now are you ready to learn how to make these easy apple strudel muffins?!
MUFFIN INGREDIENTS:
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup traditional Land O Lakes butter, melted
- 1-1/4 teaspoons vanilla extract
- 2 tablespoons milk
- 1-20 oz can of apple pie filling (This is super important and helps make sure the muffin is moist)
STRUDEL TOPPING:
- 1/2 cup packed brown sugar
- 1 1/2 tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon cold traditional Land O Lakes butter

Ingredients
- MUFFIN INGREDIENTS:

- STRUDEL TOPPING:

- 1 1/2 tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon cold traditional Land O Lakes butter
Instructions
- Preheat oven to 375°. Whisk together first five ingredients.
- In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff).
- Cut up apple pie filling pieces to bite size morsels and then fold into batter.
- Grease 12 muffin cups using NEW Land O Lakes® Soft Squeeze™ Spread and then fill the muffin cups three-fourths full.
- For strudel topping, mix brown sugar, flour and cinnamon; cut in cold traditional Land O Lakes butter. Spread until crumbly. Sprinkle over batter.
- Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool.
- Top with 1 tablespoon NEW Land O Lakes® Soft Squeeze™ Spread!
