Last week we started Back to School…. online. and it was all kinds of lackluster and hard, and I decided we needed a little magic to come our way. It has been a rough couple of months, so as a family, we did two things. First, we had a giant foam party in our driveway.
Super fun right?! The second thing we did was to make some Unicorn Cookie Cups. Check out how awesome these are!
Here is what you will need:
Pastel-colored candy chips
1 cup margarine or butter
3/4 cup sugar and packed brown sugar
1 egg
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
You will also need a cookie shot pan. You can click on the image if you would like to check out purchase options.
Here’s how to make them:
First, heat your oven to 375. Mix margarine, sugars, and egg. Then stir in flour, baking soda, and salt. Stir in chips and gently mix. Spray the cookie cup pan and cup inserts well with cooking spray. Drop about 2 tablespoons of batter into the bottom of the pan and press the cup mold in firmly on the top. You will have some spill out over the top.
Bake for 17 to 19 minutes, Cut around the cookie shot mold any excess batter that baked out of the top while the dough is still warm. Let cool fully before removing. I like the kind of rough-fringed top, but you can straighten yours out.
Fill that yummy cookie up with your favorite ice cream, and you have a super winner right here!
