Sometimes late at night while I am lying in bed and trying to assess the day’s events I will get an idea for a recipe. Last night I was thinking about pistachio, one of my favorite flavors. Probably better to think about pistachio rather than that day’s specific events….

Anyway, I started wondering whether you could taste the pistachio on a cookie if I tried something. So of course this morning, I had to go out and buy the ingredients to try it! I am happy to say my recipe worked; you can taste the pistachio and they are yummy!

Making this recipe is super simple. Here are the ingredients you will need:

1 cup margarine or butter
3/4 cup white sugar
1 egg
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 package pistachio pudding
1 bag white chocolate chips
*optional 15 drops of green food coloring



Mix together all of the dry ingredients and add then add the margarine, egg, and food coloring. You may need to work the dough for a bit to get all of the green food coloring mixed in. You don’t have to add green food coloring, but it is kind of fun! Add the white chocolate chips last. Then bake at 350 for about 10 to 12 minutes.

Ingredients
