I am kind of obsessed with summer side dishes. To me, they are almost as important as those delicious grilled main dishes that become a staple during the summer months. Recently, my husband and I whipped up a delicious succotash that was served at my son’s 16th family birthday party. Because I am Latina and we live in the land of the Southwest, we, of course, gave it a little of our local cultural taste flair!
Making this is super easy and takes only a few ingredients. Plus no lima beans, which I think is totally winning :)
Here is your ingredients list:
1 can black beans
1 large bag frozen corn
1 red pepper
1 red onion
2 to 3 tablespoons fresh cilantro
1 cup shredded cheese
2 tablespoons chili powder
2 teaspoons fresh lime juice
2 teaspoons salt
1 teaspoon pepper
1 tablespoon of olive oil
Here’s how to make it!
Saute onions and pepper in olive oil.
Add the frozen corn to the sauteed vegetables.
Cover and let simmer for about 5 minutes.
Once the corn is no longer frozen, add the cilantro, chili powder, salt, and pepper. Cover with cheese and let melt.
You can add a little more fresh cilantro to the top prior to serving if you would like.
Enjoy! We totally are making this again for our 4th of July at-home festivities. Did I mention I purchased a cupcake pinata? Oh yeah, we are going all out this year for the 4th since everything else is cancelled.
