I love sugar cookie bars! This love for sugar cookie bars began a few Christmases ago when someone gifted our family a platter of them. It was love at first bite.

Today I am sharing a new sugar bar cookie creation just in time for the holidays. I think it is time for some Grinch Sugar Cookie Bars!
Sugar Cookie Bars are amazing because once you have the base bar recipe in place, you can create a ton of new variations from it. Here is what you will need to make it.
Cookie Bar Batter Ingredients:
- 1 cup butter, room temperature
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla
- 2 1/2 cups flour
- 3/4 tsp salt
- 1/4 tsp baking powder
Preheat oven to 350ºF. Line a half baking sheet with parchment paper. Mix together the flour, salt, and baking powder in a small bowl. Set aside.
In a large mixing bowl, cream together butter and sugar. Add the eggs and vanilla. Mix until combined. Add the dry ingredients to the wet ingredients and stir again until combined.
Press into a baking dish lined with parchment paper. Bake for 15-18 minutes or until barely light brown. Cool completely.
Frosting:
Frost the sugar cookie bar with a nice even layer of your cream cheese frosting. You can use store-bought or this recipe.
I also used this super cute Pastel Green Food Color to get that nice grinchy color.
Cut into about 12 evenly-spaced bars and place a single red heart on each bar.
Then enjoy!
