Over fall break I took my children to Olive Garden for lunch. They fell in love with the Pasta e Fagioli dish that they serve there and have been asking to go back. Now because I am cheap…. a WHIZ in the kitchen, I instead decided to do what I do best. To come up with an easy to pull together dish for a family favorite in a uniquely Jen way. This dish is perfect for winter and seriously takes only about 30 minutes to pull together!
Here are the ingredients you need to make this delicious dish!

- 2 tbsp.extra-virgin olive oil
- 1 lb. Italian sausage
- 1 medium yellow onion, finely chopped
- 3 medium carrots, peeled and finely chopped
- 2 stalks celery, finely chopped
- 3 tsp minced garlic
- 1 1/2 tsp salt
- 1 tsp black pepper
- 2 (15 oz.) cans Great Northern Beans
- 2 (15-oz.) cans diced tomatoes
- 4 1/2 c.Chicken Broth
- 2 sprigs rosemary, leaves finely chopped
- 1 1/2 c. elbow pasta (or other small shape)
- Freshly grated Parmesan, for garnish
Here is how to make it!
In a large, deep pot over medium heat, heat oil.
Add sausage and cook, breaking up with a wooden spoon, until cooked through, about 5 minutes.
Stir in onion, carrots, and celery and cook until slightly softened, about 5 minutes.
Add garlic and cook until fragrant, 1 minute more.
Season with salt and pepper, then add in beans (with their liquid), diced tomatoes, chicken broth, and rosemary.
Bring to a boil, then stir in pasta.
Reduce heat to medium and cook until pasta is al dente, about 8 minutes. Taste and adjust seasoning if necessary.
