Chorizo and Cheese Puff Pastry Bites

Have you ever tried chorizo? Or have you never even heard of it? It’s a spicy sausage that is either made with pork or beef. In Southern AZ you can pick it up at almost any grocery store. In my family, we cook chorizo with scrambled eggs and serve it with fresh tortillas, but chorizo is so good and can be used in so many ways.

Recently I was looking for a fun idea for an easy-to-make appetizer for a holiday party and I decided chorizo was the way to go! It really is underrated and should be used more I think.

I made my first test batch to make sure my idea would actually taste good, and when I popped one into my mouth…. oh my gosh, it was so good! Like seriously good. Why have I never done this before? Plus the best part of this recipe is that it took only about 30 minutes to make a batch of  20 to 30 of these! You can decide how much puff pastry you want to use.

Here is what you need to make these:

1 package of your favorite chorizo
1 package of puff pastry
1 4 oz bag of Monterey Jack Cheese

Here is how you make it:

Let the pastry puffs thaw on your counter.

Cook the chorizo in a small frying pan.

Place a light dusting of flour on a surface and roll out the pasty puffs.

Using a pizza or dough cutter, cut the pastry puff into about 2-inch wide strips.

Using a small muffin tin, press the dough firmly into each muffin well. Make sure you have a little lip of the dough sticking up over the top of the tin.

Spoon in a small amount of chorizo into each pastry well. Don’t overfill.

Cook at 350 for 1o to 15 minutes.

Take out of the oven and top each pastry puff with shredded cheese.

Cook for another minute until the cheese is melted.

Cool and enjoy!
