Do you love eggnog? My family really loves that rich and delicious stuff! During the Holidays I try to keep it around for them to enjoy. This week as I was pouring a glass for my youngest daughter I had a realization that kind of blew my mind. I realized I had never actually baked with eggnog before?!

I am not sure how that is possible….

This realization then led me straight to creating the holiday doughnut of my/your/our dreams, because for me doughnuts are a way of life. I am pretty sure this doughnut is going to make a whole lot of other people happy too. Let me take a minute to introduce you to my newest doughnut creation. ….. I could not believe how super simple making these were. I kind of just added a dash of this and that, and tasted as I went along. Just make sure to have a good doughnut baking pan. Here is a link to the one I use.

Here are the ingredients you will need.

For the doughnut:

  • 1 1/2 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup eggnog
  • 1 large egg
  • 3 tablespoons vegetable oil
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 teaspoon almond extract

For the Frosting:

    • 1 1/2 cup confectioners’ sugar
    • 3 tablespoons eggnog
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • dash of ground nutmeg

Eggnog Doughnuts

Ingredients

  • Doughnut Ingredients:
  • 1 1/2 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup eggnog
  • 1 large egg
  • 3 tablespoons vegetable oil
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 teaspoon almond extract
  • Frosting Ingredients:
  • 1 1/2 cup confectioners' sugar
  • 3 tablespoons eggnog
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • dash of ground nutmeg

Instructions

  1. Gather the ingredients.
  2. Preheat the oven to 375 F.
  3. Grease a 6-well doughnut pan or spray it with nonstick cooking spray.
  4. In a medium bowl, combine the flour, baking powder, 1/4 teaspoon of nutmeg, and the salt. Whisk or stir to blend thoroughly.
  5. In a mixing bowl, whisk the 3/4 cup of eggnog with the egg, vegetable oil, granulated sugar, and 1 teaspoon of vanilla extract and almond extract.
  6. Add the flour mixture and stir until well blended.
  7. Spoon the batter into the wells of the doughnut pan, filling them about two-thirds full. Alternatively, to pipe the batter, spoon it into a plastic food storage bag and cut out a small piece of the corner. Squeezing the bag, pipe the batter into the wells.
  8. Bake the doughnuts for about 9 to 11 minutes, or until set. A toothpick inserted into a doughnut should come out clean.
  9. Let the doughnuts cool in the pan for about 10 minutes, then turn them out onto a rack.
  10. Frosting Directions:
  11. Sift the powdered sugar into a bowl. Add 3 tablespoons of eggnog, 1/2 teaspoon of vanilla and almond extract, and a dash of nutmeg. Stir until well blended. If the batter seems too thick, thin it with more eggnog or some milk.
  12. Dunk the tops of the doughnuts into the glaze and place them back on the rack to dry.
  13. The glaze would soak into the more porous bottoms, so the tops are best for glazing.
  14. Enjoy!
