Fall has always been one of my favorite seasons. This season ushers in cooler weather in my Southern Arizona home and for me, always seems to instill a feeling of the possibility for new opportunities that may be just around the corner. This year I am ready for those hoped-for opportunities and, especially for the food that is quintessentially Fall.
Today I am excited to share with all of you a fun and super easy recipe whipped up in my very own JENerally Informed “Kitchen”. Let me take a minute to introduce you to Air Fryer Mini Caramel Apple Empanadas!
As a blogger, I am the Queen of finding ways to cut the amount of time I spend in the kitchen, and here are my empanada making secrets.
Secret Number 1, use ready-made pie dough. Any brand will work!
Secret Number 2, buy the ready-made pie filling! Brilliant right?!
Now here is how to make them. First, you will need a small 4-inch diameter circle cookie cutter to create your empanada shape, and because I am classy cheap, I use a jar lid that I have had for years. Even if someone bought me a beautiful new cookie cutter, I would still probably use my jam lid. I think this makes my Abuelita and Mom proud somewhere. However, I have seen these cookie molds everywhere, so you can grab one at any large chain or crafting store. Or you can be like me and use a jar lid!
Once you have cut out your circle in the dough, spoon in about 2 teaspoons of the pie filling and fold the circle in half and crimp the edges closed with a fork.
If you don’t already have an air fryer, RUN, don’t walk to your nearest store and buy yourself one. These are seriously the greatest cooking invention in recent years. I love ours and use it all of the time. To cook the apple empanadas in the air fryer, spray a little cooking spray on the tray of the air fryer and put about 3 of your crimped apple empanadas in to cook at 350 degrees for 5 minutes. Watch the time though, because you could need more or less time depending on your machine.
For the apple garnishes, I used some small apple-shaped cookie cutters and leftover pieces of the dough. I cooked the garnishes separately for about 3 minutes and then affixed them to the top of the empanada with melted butter.
To make about 12+ empanadas, you will need about 2 to 3 packages of dough and only one can of the pie filling. My people were very excited to wake up yesterday morning to the smell of fresh empanadas coming from our kitchen, and making these took me less than 30 minutes. That is winning in the kitchen arena :)

Air Fryer Mini Caramel Apple Empanadas
Ingredients
- Ready-made pie dough (2 to 3 packages)
- Ready-made caramel apple pie filling (1 can)
Instructions
- Use a small 4 inch in diameter circle cookie cutter to create your empanada shape. You will need about 2 to 3 packages of ready-made dough to make (12) 4-inch circles.
- Once you have cut out your circle in the dough, spoon in about 2 teaspoons of the pie filling and fold in half and crimp the edges with a fork.
- Bake in an air fryer at 350 degrees for 5 minutes.
