Guys, I am sooo excited to share the BEST recipe with you ever! If you like cheese, then this is going to quickly become one of your favorites too! My children even really enjoyed this dish and asked if we could add it to the regular dish lineup.
This recipe came about because I am on a short little stint of Keto to kickstart my health. I am not limiting carbs excessively, but I do notice that overall, I feel better with fewer bread products. The thing about Keto is that you really need to cook to do it right so you’re not miserable and hungry all the time. Eating good and fresh food makes it doable.
I recently saw a video on Instagram about a feta bake that looked delicious. The influencer used pasta at the end, but I thought maybe we could substitute it with cauliflower. So, we tried it, and it is fabulous!
Here is what you need to make it:
1/2 cup kalamata olives
1 or 2 blocks of feta cheese (we use 2 because we want leftovers)
12 to 15 slices of mozzarella cheese
3 cups of cauliflower
3 cups cherry tomatoes
1 tablespoon garlic
parsley flakes for seasoning if desired
salt, pepper, and olive oil
Here’s how to make it:
We use a skillet because Jen’s Guy says those are best. Cut and prepare cauliflower (or use a ready-cut bag) and add to a pot to steam for about 10 to 15 minutes or until softened. Then drain the cauliflower and let it sit to the side.
Next, heat your skillet to medium and add olive oil, tomatoes, and garlic. Salt and pepper lightly. Let that slow cook a little until the tomatoes have softened.
Add your feta cheese to the center of the pan and cook in a 350-degree preheated oven for about 3 minutes, only long enough to soften the cheese.
Remove your skillet from the oven and mix your feta and tomatoes.
Add your steamed cauliflower to the skillet and mix all of the ingredients well.
Top the dish with sliced mozzarella cheese and return to the oven for about 5 minutes to bake and soften the cheese.
Remove the skillet from the oven and top with parsley flakes. Then, it is time to DIG in!
