We are having the strangest weather here in Southern Arizona. It has been colder and wetter than it has been in a really long time. Although we desert rats live for the rain, it is kind of messing with my brain. One day it will be sunny and beautiful, then the next day it will be cold and rainy. All of these temperamental weather changes has really set my brain on all things Spring, and recently on a little trip to my local grocery store I came upon these beauties and knew there was a spring-time recipe waiting to be created and shared!
What are these beauties you may ask? They are none other than Carrot Cake flavored OREO cookies!
Even though I am still doing gang busters on my KETO diet, I still enjoy making fun holiday themed treats for my children. And let me tell you that these quick and easy treats received double thumbs up from my children.
What I love about these little gems is that with only 3 ingredients, and in about only 30 minutes I was done making these and my kids were happily scarfing them down!
Here is what you need to make them:
1 package Carrot Cake OREO cookies
2 cups white chocolate candy melts
Spring time sprinkles
Baking Tip Time
I know there are such things as double boilers and such which can help you melt the chocolate, but I have always had great success using my microwave. You just need to be careful not to over cook and burn the chocolate!
Place your 2 cups white chocolate melts in a microwave safe bowl and heat for 30 seconds. Take out the chocolate and stir. Then put them back in the microwave for 30 seconds. Mix well again even if there are a few clumps- mixing will help to evenly melt all of the chocolate.
To prep- place your cookies on top of wax paper and then dribble evenly and spread the melted chocolate on top of the cookies. Making sure to promptly apply the spring time sprinkles to the top of the cookie before the chocolate hardens.
Super easy right?! Plus they are so good!
