Over the past year, our family has begun implementing some changes in how we eat as a way to not only live a more balanced and healthy lifestyle but also to help my oldest daughter Sam feel the best she can with some dietary concerns that needed to be remedied. If you are an old-time JENerally Informed reader, don’t be worrying that this means I won’t be sharing donut recipes anymore, because those kinds of recipes are still TOTALLY happening. I am just going to throw in a few new “healthier” recipes we have tried as a family that received the double thumbs up!
One thing I have noticed is that dairy-free ice cream treats are kind of expensive, so I started experimenting a little to see if I could find a few that tasted good and didn’t break the bank. This one is a keeper and it is so ridiculously easy to make it has revolutionized my approach to dairy-free sweet treat making!
To make this you only need 4 ingredients, a blender, and about 10 minutes.
Here are the ingredients you need:
- 2 1/2 cups of frozen or fresh peaches
- 1 cup coconut milk (full fat)
- 3 tablespoons of honey
- 1 teaspoon of vanilla
To make you simply add all of the above ingredients into a blender and blend until it is a smooth and creamy consistency.
Pour or spoon the mixture into Popsicle molds. We had a little leftover that didn’t fit into the molds which my helpers happily took care of.
Then pop those puppies into the freezer.
And in just a few hour’s time, you will be able to enjoy your creamy dairy-free cool treat!
