Most of my readers here at JENerally Informed are women and that’s just fine by me, because I get women, since I am one and all… Anyways, I think it is pretty safe to say that we women stress BIG time during the holidays! With songs like “It’s The Most Wonderful Time Of The Year” looping every stinking place we go, I think a lot us start feeling pressure to deliver tradition like the strokes of a Norman Rockwell painting. It’s a lot.

The real magic of Christmas is love.

I think though that sometimes it is the most simple of things, that in their uncomplicated-ness (yes Virginia that IS a word around here) which end up bringing the most magic to ourselves and those we love. Because the most important things in life, really aren’t things. They never are.

The real magic of Christmas is love.

So today, I wanted to share a recipe with you that, in it’s simplicity, I hope will help you to enjoy more of the fun and special moments of the Holiday season. Because who wants to be cooped up in the kitchen the whole time that everyone else is having fun? Not I and I am guessing you feel the same way.

Now check out how beautiful this recipe looks, and the best part is that you will spend hardly any time in the kitchen making it! It’s the perfect Holiday brunch recipe. I promise.

Because in general, leftovers mean that something did not go over well with my family,  But not this recipe! Even the toddler cleaned her plate. Outside of French fries and ice cream that rarely happens.

I hope in a small way, this recipe might be something that can help you this Holiday season. And on that note, have you heard about Minute Maid’s #doingood campaign? I think it’s pretty fantastic! The campaign is focused on helping to remind parents of all the wonderful things – big and small – you do to make a positive difference in your children’s lives every day. It’s a celebration of  perfect imperfection for moms and dads everywhere who are, in reality, doing much better than they think. Because you are.

Thank you! Mine too, but my oldest has now formed quite the liking of french toast, so sometimes we can veto vote and not always have pancakes :) Hope you get a chance to try it out :)
