This last weekend my husband and I were invited to an adults only Holiday party. We were super excited, but we knew that this particular weekend was going to be busy. There were visits to see lights, shopping excursions, end of semester projects to work on with our children and so much more. It would would have been somewhat tempting to avoid the extra work of yet another event, but considering we do things like this for ourselves maybe once a year, I was not going to be deterred. If I was going to do this, it needed to be done right, so I needed to come up with a food contribution for the party that would be both simple and delicious. Look what I came up with!

You know you want some too, don’t you?

I don’t blame you, because when we bought our dish home from the party it was scraped clean. That’s when you know you have a winner. What all of the other party guests didn’t know though is that this delicious recipe took me only about 15 minutes to pull together and I did it with the help of RO*TEL and Rosarita.

All of the ingredients and fresh produce for this amazing 7 layer bean dip were picked up at my local Walmart.

I am so glad you liked this! I think your husband and mine sound like kindred spirits. The night of the party he said his dream would be to sit and eat the dip all by himself!

  1. Hi Jen, anything that takes fifteen minutes to prepare sounds perfect to me! This bean dip sounds like a perfect summer barbecue side dish too. We don’t get a variety of tinned beans here, but there is an abundance of dried beans to choose from, but I think that would work too.

Hope you and your Hubby had a wonderful child free night out!

    xx

You are right, it would be great for the summer too. Or anytime really, because I cannot imagine a world without bean dip! You absolutely can cook up some beans and use that as the base if items like Rosarita aren’t readily available. Add those to the list of things I need to work on sending over to you someday on your beautiful island :)
